When I was faced with the daunting challenge of a cancer diagnosis, food transformed from a simple necessity into a powerful ally in my journey toward healing. It became not just a source of sustenance, I had to research about food that could help boost my immune system and those that I needed to avoid. It was enlightening and empowering.
I discovered that nutrition could play a vital role in how I felt physically and emotionally. I focused on incorporating fruits, vegetables and lean proteins into my meals. Additionally, I have a very sensitive stomach so I avoided alcohol and processed foods as they were some of the culprits. Now, after more than a decade of being cancer free, cooking for the people I love is a therapeutic outlet for me, it became a means of connecting with family and friends. It also became a way for me to prepare celebratory dinners and bible studies that I host.
Through my journey, I’ve learned that food is more than just fuel; it’s a way to connect, heal, and thrive. As I move forward, I remain committed to making mindful food choices, not only for my own well-being but also to share the joy of cooking and dining with the people I cherish.
